Joanie's Chili Pizza

Raising a family and trying to be economical while serving tasty food is when a Mom/Cook becomes creative.  Sometimes the creations in my kitchen were successful and sometimes they were not.  I'm real happy to share this creative recipe and I sure hope your family will enjoy it as much as my family!
 
 
Leftover chili...no problem.  Let's make a Chili Pizza!
 
 
Ingredients:
 
1 to 1 1/2 cups of Chili (judge the amount desired as you spread it on cornbread)
1 batch of cornbread
1 lb. of shredded cheese (I've used Cheddar, Colby/Jack, Pepper Jack, or a blend of all three)
 
Preheat oven to 400 degrees.
 
Grease a rectangular baking dish with Olive Oil.
 
In a mixing bowl, mix Cornbread according to package directions.
Spread prepared cornbread in baking dish.
Top cornbread with Chili.
 
 
Cover Chili with shredded cheese.
 
 
Bake for 30 minutes.  Check to be sure your cornbread is thoroughly baked.
 
Serve with a dollop of sour cream, spoonful of salsa, some sliced green or black olives, or simply as it is!
