VEGETABLES/ GRANDMA'S ZUCCHINI BAKE - CASSEROLE STYLE

Ingredients:
Zucchini (3-4 small, or 1-2 med-large)
2 cans diced tomatoes
(or several fresh/ripe summer tomatoes)
2 cups rice
1 1/2 cups water
Sausage
Parmesan and Mozzarella Cheese
Preheat oven to 350°F. Fry sausage in sauce pan,
drain and rinse off grease.
In a 13"x 9" baking dish, combine rice and water.
Slice zucchini (for large zucchini, slice in half and scoop out seeds).
Place zucchini on top of rice.
Place tomatoes (not drained) and sausage on top of zucchini.
Bake for at least 30 minutes, or until zucchini is tender.
Last ten minutes of baking, place fresh Parmesan
and Mozzarella cheese on top.
Angela says, "This recipe is a casserole interpretation from Grandma Louise's original Zucchini Bake Recipe. This was a recipe that Grandma used with the extra large zucchini out of their summer garden, as they were too tough for frying. Great recipe for large or small zucchini!"
